Tylose Gum Paste Recipe

125 grams egg whites
725 grams icing sugar
100 grams icing sugar for kneading
30 grams tylose powder
20 grams shortening


Place egg whites in a bowl with sugar mix until soft peak stage.

Add tylose, mix on high speed till mixture gets firm.

Place on board with rest of sugar rub hands with shorting and kneed. Place in ziplock bag and place in fridge overnight.
